Metro Manila · Ippudo - new ramen place opens in Manila
A delicious bowl of noodles or ramen is the perfect comfort food this rainy season. Fortunately, you will never run out of choices when it comes to ramen places in this Megacity. The latest to set up shop in the Philippines is Ippudo, founded by Ramen King Shigemi Kawahara in 1985 in Japan's ramen capital Hakata.
Ippudo Philippines has recently opened its flagship store on the 3rd level of Mega Fashion Hall in Megamall.
Founder Shigemi Kawahara's claim to fame is turning the Hakata-style tonkotsu (pork-based) ramen into the delicate creamy version that brought Ippudo ("One Wind Hall" in English) national acclaim. Ippudo was also the first to refer to the broth by colour aka for red or spicy and shiro for white or classic, which soon became a standard industry practice.
Ippudo Philippines offers three signature ramen flavors: shiromaru motoaji, akamaru shinaji, and karaka-men.
The first is Ippudo's classic ramen made of tonkotsu broth served with ultra thin noodles, pork loin, bean sprouts, kikurage and spring onions. The second is made of tonkotsu broth enhanced with special blended miso paste and fragrant garlic oil. It is also served with thin noodles, pork belly, kikurage and spring onions. The third ramen also has tonkotsu broth served this time with thin wavy noodles, pork belly and spring onions. It is given extra kick with the addition of special spicy minced meat, miso paste and fragrant garlic oil.
Diners have the option to select the hardness of their noodles: soft, medium, hard, and very hard. New ramen flavors will be introduced in the near future.
Other must-tries are the side dishes like the curry cheese harumaki, which is deep fried spring rolls stuffed with curry, minced pork and cheese, and dashimaki tamago, which is omelette roll served with cod roe mayonnaise dip. We specially liked the Ippudo pork bun, which is steamed bun with juicy braised pork belly and Ippudo's original sauce.
Drinks range from regular soda to San Miguel Beer Premium.
Ippudo Philippines operations manager Yota Shiiba said that 80 percent of their ingredients come from Japan. He will be staying on as operations manager in the Philippines to make sure the Philippine branch will maintain the traditional taste of an Ippudo ramen.
“Tonkotsu is considered to have strong flavors. Our aim is to have lighter flavor for the broth, to mask the pork's strong flavors,” said Shiiba during an interview with Megacitizens.com.
Currently, Ippudo has over 80 stores in Japan as well as branches in New York, Singapore, Hong Kong, South Korea, Taiwan, China, Sydney and Malaysia.

Condiments like black pepper, sesame seeds, and cloves of garlic are available on each table. Diners can request their noodles' level of firmness. Underneath each seat is a basket for storing bags.
